Pumpkin Raisin Nut Cookies


4 C. Flour
2 tsp. baking bowder
1 tsp. baking soda
1 tsp. salt
2 tsp. Ground Cinnamon
1 tsp. All spice / or pumpkin spice
2 C. Shortning
2 C. granulated sugar
1 Can (15 oz.) Pure Pumpkin
2 lg. Eggs
2 tsp. Vanilla extract
2 C. Raisins
1 C. Nuts chopped (I used Pecans)

Pre Heat Oven 350 degrees
Mix shortning and sugar together with mixer for about 2 min. on Med.
add all other wet ingredents
In seperate bowl mix all other dry ingredents together and slowly add to wet mixture.
Add Raisins and Nuts last.
Drop Cookies on to a baking sheet, Bake for about 12 min.

Frosting
2/3 C. Softened Butter
2 tsp. Vanilla
3 tsp. Rum extract
4 C. powdered Sugar
1/2 C. Evaporated Milk ro less if you want it thicker.
